"The focus throughout our American-based ships is American cuisine. Turkey is an indigenous American product and we emphasize turkey on our menus and presentations. Smoked turkey gives us the flexibility to use it in many ways. Smoked turkey adds flavor and variety to many of the dishes we use aboard the ships of Majestic America Line. We prepare a lot of Southern dishes and those dishes tend to emphasize smoked pork. Our clientele tend to shy away from pork for health reasons. My culinary teams on the ships have found we can still have the full flavor of traditional Southern dishes without the stigma of having so much pork. We substitute smoked turkey in many dishes."

"For dinner, we feature smoked turkey as a flavorful ingredient in a unique and popular presentation, the Italian Torta Rustica. We wanted to use turkey in a signature dish and our version of the classic Italian Torta Rustica is a great representation of how to menu smoked turkey with a little more innovation. We use smoked turkey because of its unique flavor profile and texture when combined with other ingredients. The torta has been on the menu for years and draws people from all over. This smoked turkey dish was awarded the National Cully Grand Prize, the industry's largest and leading recipe contest that attracts entries from foodservice professionals nationwide."
