Consumers generally
are aware of the healthfulness of turkey. Take advantage of this knowledge
with a heart-healthy menu section. Turkey's versatility makes it ideal
as the low-fat alternative to many of your customers' traditional favorites.
Create a special "Healthy Alternatives" menu featuring your own turkey
version of popular burgers, sandwiches, stir-fry, tacos and lasagna.
As an added service, include a nutrition analysis with each of your
healthful turkey dishes. With new computer software, recipe analysis
is relatively inexpensive. Check with your local American Dietetic
Association for assistance.
Take advantage of current labeling claims where appropriate, noting
which dishes feature lean or extra-lean turkey products as well as
those that are low in fat, sodium or cholesterol. See the Nutrition chapter
