Spicy Turkey Chili
| Ingredients |
| 1-1/2 Pounds onions, chopped |
| 1 Tablespoon garlic, minced |
| 1/4 Cup vegetable oil |
| 6 Pounds GROUND TURKEY |
| 1 Gallon canned diced tomatoes in juice |
| 6 Cups canned kidney beans, drained well |
| 1 Pound pitted ripe olives, sliced and drained |
| 1 Pound tomato paste |
| 1-1/2 Cups canned green chiles, diced |
| 3/4 Cup canned jalapeno peppers, chopped |
| 1/3 Cup chili powder |
| 2 Teaspoons dried oregano |
| 1 Tablespoon ground cumin |
| To taste salt and freshly ground black pepper |
| |
- Heat oil in a stockpot. Add onion and garlic to hot oil and sauté for about 5 minutes or until tender.
- Add ground turkey and cook until turkey is browned, breaking turkey into small pieces. Drain any excess drippings.
- Add tomatoes and juice, beans, olives, tomato paste, chiles, jalapenos, chili powder, oregano, and cumin. Add salt and pepper to taste.
- Bring to a boil, simmer 25-35 minutes or until desired consistency.
- Portion and serve, using a 12-ounce ladle.
