Romaine Salad with Smoked Turkey and Bing Cherries
| Ingredients |
| 1 Cup extra virgin olive oil |
| 1/3 Cup balsamic vinegar |
| 1 Tablespoon stone ground mustard |
| 1 Tablespoon honey |
| 1/2 Teaspoon salt |
| To taste freshly ground pepper |
| 3 Heads romaine lettuce, medium chopped |
| 1-1/2 Cups Feta cheese, crumbled |
| 3/4 Cup scallions, diced |
| 30 Ounces mandarin orange sections |
| 3 Cups SMOKED TURKEY, cut into 1/2-inch cubes |
| 2 Cups Bing cherries, washed, halved and pitted |

| Balsamic Vinaigrette |
- Whisk together oil, vinegar, mustard, honey, salt and pepper. Cover and store in refrigerator for service.

| Salad Prep |
- Toss together lettuce, Feta, scallions, oranges and turkey. Drizzle 1 cup vinaigrette over salad and toss.
- Drizzle remaining vinaigrette over cherries and toss to coat.
- Arrange salads on entree plates or in shallow bowls. Sprinkle with cherries.
