Romaine Salad with Smoked Turkey and Bing Cherries

Ingredients
1 Cup extra virgin olive oil
1/3 Cup balsamic vinegar
1 Tablespoon stone ground mustard
1 Tablespoon honey
1/2 Teaspoon salt
To taste freshly ground pepper
3 Heads romaine lettuce, medium chopped
1-1/2 Cups Feta cheese, crumbled
3/4 Cup scallions, diced
30 Ounces mandarin orange sections
3 Cups SMOKED TURKEY, cut into 1/2-inch cubes
2 Cups Bing cherries, washed, halved and pitted
 
Balsamic Vinaigrette
  1. Whisk together oil, vinegar, mustard, honey, salt and pepper. Cover and store in refrigerator for service.
 
Salad Prep
  1. Toss together lettuce, Feta, scallions, oranges and turkey. Drizzle 1 cup vinaigrette over salad and toss.
  2. Drizzle remaining vinaigrette over cherries and toss to coat.
  3. Arrange salads on entree plates or in shallow bowls. Sprinkle with cherries.
